Cilantro, Black Bean, and Corn Salsa Recipe: How to Make It in Minutes

This is a fun summer recipe but can easily be served year-round, using frozen corn. Eat it on its own or serve with some tortilla chips. It is also a gorgeous dish with all the colors of the beans, greens and corn! It's also easy, quick to make and healthy.


Ingredients:

  • 6 ears bi-colored corn, cooked and cut off cob

  • 2 (15 ounce) cans black beans, drained and rinsed

  • 1 (14.5 ounce) can Italian style diced tomatoes, drained

  • 1 bunch finely chopped cilantro

  • 5 green onions, finely sliced

  • 1 small red onion, finely chopped

  • 1 red bell pepper, seeded and chopped

  • 1 tablespoon minced garlic

  • 1/4 cup lime juice

  • 1 avocado - peeled, pitted, and diced

  • 2 tablespoons olive oil, or to taste

Instructions:

  1. Stir the corn, black beans, tomatoes, cilantro, green onion, red onion, bell pepper, and garlic in large bowl.

  2. Gently mix in the lime juice and avocado.

  3. Drizzle with olive oil to serve.
